This wine is a blend of Pinot Gris (60%) and Sauvignon Blanc (40%) from our 33-year-old dry-grown vines at Birchs Bay. The grapes were destemmed and co-fermented on skins for three weeks with gentle hand plunging. Aged in a combination of stainless steel and glass demijohn for 15 months before bottling.

'Mid-weighted, succulent and whole-bunch spicy, with a green tinge manifest as ascents of butterscotch menthol, peat, greengage and dried brown spices. Spicy and nicely pliant, with a trajectory of fruit sweetness building in steam across the impressive finish. Idiosyncratic, sure, but beautifully handled and thoroughly intriguing.'
