In our estate vineyard at Birchs Bay, we have a row each of Cabernet Franc, Malbec and Merlot vines. In warmer vintages, these vines would produce a very special blend made to be drunk with friends and family; one vintage was poured exclusively at our friend Luke Burgess’s restaurant Garagistes. This wine is a blend of the 2021 and 2022 vintage. Fermentation saw a combination of crushed and destemmed grapes for structure and tannin, and also some whole bunch for freshness and aromatics. A ‘Sarabande’ is a slow and stately elegiac 17th-century European dance. The wine is an estate blend in the European sense and should dance on the palate!
